Amarone della Valpolicella is made from dried grapes, yielding a full-bodied red with concentrated dark fruit, dried cherry, and prune characters alongside chocolate and subtle tobacco notes. The palate is rich and velvety with moderate to high tannins and a warming alcohol presence, balanced by good acidity. The appassimento process creates a distinctive dried-fruit intensity and complexity that distinguishes it from fresh-harvest reds.
